Menu Recap Week 2

Sunday


  • breakfast: TJs wheat free waffles, maple syrup, blackberries
  • lunch: we were running in the door and back out again: turkey lunchmeat roll-ups (organic and nitrate free at least!) bananas, almonds
  • dinner:  rice, leftover baked chicken chopped up, broccoli/cauliflower, soy sauce, oil...all tossed together, romaine lettuce and carrot shreds.
  • snacks:  gummy snacks, bananas, almonds (you may be noticing I go heavy on the almonds - it's the only nut I can seem to find that is peanut free), our trail mix (various GF cereals, raisins, chocolate chips)


Monday


  • breakfast: GF cereal
  • lunch: leftover rice/chicken/veggies from last night
  • dinner: stew (beef cubes, carrots, potatoes, celery)
  • snacks: chips and salsa, trail mix


Tuesday:


  • breakfast: oatmeal
  • lunch: rice cakes with sunbutter or cream cheese, tortilla chips/salsa
  • dinner:  crock pot lemon garlic chicken, sweet potatoes, applesauce
  • snack: blackberries, herbal tea, more chips/salsa, cereal


Wednesday:


  • breakfast: cereal
  • lunch: leftovers, rice crackers with chicken salad
  • dinner: soup (rice, red lentils, chicken broth, frozen mixed veggies, spices), taquitos from TJ's
  • snacks: granola energy balls, cereal, avocado, apples, chips/salsa


Thursday:


  • breakfast:  cereal for kids, I ate later and made myself an apple and made my own version of the granola energy balls above - sunbutter, rice krispies, ground flax, ground oatmeal, cocoa powder, popped amaranth,   honey. Not bad.)
  • lunch: banana, avocado, the rest of the sunbutter-mix from this morning, chips and salsa,
  • dinner: leftovers for the kids (soup, taquitos), dh and I had PF Changs gluten free menu items for our in-home date night, thanks to a gift card from my parents (thanks Mom and Dad who don't read this blog! ;-)  )
  • snacks: chocolate milk, bananas, apples, spiked chocolate milk (that was mine, lol. You know it's going to be a rough day when you are crying before 7 AM)
Friday:

  • breakfast:  gluten free chocolate muffins
  • lunch:  rice cakes with sunbutter or cream cheese, something else healthier I can't recall! Dh and I ate PF Chang's leftovers
  • dinner: salmon patties, french fries, salad, applesauce
  • snacks:  the usual

Saturday:


  • breakfast: cereal
  • lunch:  some leftover salmon cakes, french fries, last of PF chang's fried rice (for me), clementines, apples
  • dinner:  corn pasta, chili, baked butternut squash, salad
  • snacks: clementines, trail mix, strawberries, chocolate milk, a few cheese puffs

Ugh, we need more veggies. :-P
